This recipe overall is gluten-free, low sugar and keto as well. I used the cashini (cashew + tahini) butter from Artisana Organics to create some magic along with some bunny grahams, low carb pancake mix, and of course, some chocolate easter eggs.

Loaded Easter Bunny Chewy Cookies

Serves 8 large cookies
Ingredients
1 cup of low carb pancake mix
1/2 tsp of baking powder
1/2 cup of Rx Sugar alullose (MARIA20 for discount)
1/2 cup of brown granulated monk fruit
3/4 cup Artisana Organics Cashini Butter
1 whole egg (or egg substitute)
1 tsp of vanilla extract
1/4 cup of water
1/3 cup of birthday cake bunny grahams
1/3 cup of chopped chocolate easter eggs
Method
Preheat the oven at 325F.
Mix all the all the dry ingredients for the cookies but save half of the chocolate easter eggs and bunny grahams.
Add the wet ingredients and mix again.
Refrigerate the dough in the fridge for 10 minutes.
Create 8 big cookies and top with leftover chocolate eggs and bunnies.
Bake for 11-13 minutes.
