One of the best parts of this recipe is that it's made with simple ingredients and it just takes a few steps to make! Using my favorite ingredients; My current obsession, mangoes and Artisana Market Coconut butter, for topping and in the mango mix.
About this Mango Coconut Mousse:
We are showing some love to all my mango and coconut enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just using some Artisana Market Coconut Butter, mango and coconut butter.
Key Ingredients:
Keeping it extra delicious, magical and just epic by using some coconut butter for the perfect silky effect, and to make it even healthier we are using RxSugar alullose as our sweetener, if you want to make it sweetener, I didn't add extra sweeteners, it was just right.
Just a very easy and healthy elegant recipe you'll love! This is simply perfect for meal prep since they just require a few ingredients as well as minimal steps to make this Mango Coconut Mousse, also ready yo attack that sweet tooth at any moment.
The base of this Mango Coconut Mousse:
The base is made with simple ingredients, Artisana Market Coconut Butter, coconut yogurt, and coconut butter, and if you want to keep things sweeter you can add some RxSugar alullose.
Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using alullose or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Mango Coconut Mousse

Serves 1-2
Ingredients
2 ripe mangoes
1 cup of coconut yogurt
1 tsp of vanilla extract
4 tbsp of Artisana Market Coconut Butter
4-5 mandarins
1/4 cup of granulated monk fruit
Toppings
3 tbsp of brown granulated monk fruit
Method
Slice the mangoes in half and carefully remove the flesh, set these aside.
Blend the mango flesh, coconut yogurt, vanilla extract, monk fruit and coconut butter.
Stuff the mangoes shells with the mix.
Top with brown granulated monk fruit and roast with a kitchen torch.
