Mango-Strawberry Crunch Popsicles (Vegan & Low Carb)

Is there something that screams summer higher than mango popsicles? Well, summer or not these popsicles are delicious in every single way! Stick around for this easy, gluten free, low carb and vegan friendly recipe.


Well, double layer double the fun! From strawberries to the mango layer, and touch of low carb cereal these popsicles is my definition of summer dreams. Creamy, nutrient dense and super easy to make.



About these Mango-Strawberry Crunch Popsicles:

These popsicles are extremely easy to make plus they are fun to make; just a perfect summer activity, snack or dessert that will hit the spot at any time of the day.


The basic ingredients are mango, my favorite low carb cereal AKA Magic Spoon, strawberry protein from Nuzest and for some extra nutrients I added some hemp seeds.



Adding some protein powder for extra creaminess and a satisfying filling. I use on repeat Nuzest Protein, also plant-based, low carb and with minimal ingredients. It has a great taste; not chalky, funky or anything like that. In this occasion I decided to go with the Strawberry flavor and it was just the perfect combination to go along with mango.



Magic Spoon, the crunch factor! This is a cereal that has been on my love list of foods for over two years, maybe, since it launched. Because it just a major comfort food for me, growing up I used to live fueled by cereal and this healthy alternative is just the best!



I added some of the cereal on the bottom of the popsicles and into the top of them for extra fun and to have that fun and extra crunch to the recipe, it's really a game changer! In this recipe I used their Maple Waffle flavor.

So we've got our protein, our crunch factor and we've also got our micro nutrients from the mangoes and the hemp seeds; fiber, healthy fats such as omega-3's.


These are super easy to make as well and practically fail proof! You only need your blender!

The end result

Thick, coconutty and soft! These are just a tropical dream in a blondie! The flavor of banana along with the coconut here is just dreamy and irresistible. The outside is slightly crispy and the inside is thick, rich and soft at bite.


Melts in your mouth!



You might want to save this recipe because a second batch might be needed here! I shared some of the blondies with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to bake some more.


Pro tip: Air fry them for a few minutes for a crispier blondie! You can also freeze them and have them ready to devour at any moment of the day.

Mango-Strawberry Crunch Popsicles

Serves 10 servings


Ingredients


Method

  1. Add the 1 cup of cereal in equal parts on the bottom of 10 silicone popsicle molds.

  2. Blend 3/4 cup of the nut milk with 2 tbsp of monk fruit along with the hemp seeds and protein powder.

  3. Pour into 10 silicone popsicle molds and free for 30-60 minutes.

  4. Blend the rest of the ingredients and pour over the strawberry layer.

  5. Add the rest of the cereal and freeze overnight.

  6. Enjoy!
