We are showing some love to all my waffle and bacon enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the True Story Uncured Applewood Smoked Bacon and sugar-free maple and a touch of sugar-free glaze, and also, Banza Gluten-Free Waffles in buttermilk.

Keeping it extra delicious, healthy and just epic by using some maple syrup, apples, chocolate and bacon for the pretty extra protein here, and to make it even healthier we are using RxSugar maple syrup as our sweetener, some True Story Uncured Applewood Smoked Bacon, sugar-free glaze, and of course some of these fantastic Banza Gluten-Free Waffles in buttermilk. A great healthy recipe without sacrificing great taste!
You won't see waffles another way from now on! This is simply perfect for meal prep since they just require a few ingredients as well as minimal steps to make these little loaves, also ready yo attack that sweet tooth at any moment.

The base is made with simple ingredients, some apples, True Story Uncured Applewood Smoked Bacon, chocolate chips, egg whites, unsweetened almond milk and to keep things sweet some RxSugar maple syrup, and for the waffles I have been loving these Banza Gluten-Free Waffles in buttermilk. The perfect texture for this waffle casserole.
Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using abullone or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat waffles another way! These are super easy to make and just super yummy, plus good for you. I have been trying to increase some fiber in my diet so the chickpea waffles here hits the spot for that amazing extra protein and nourishment.

Maple Bacon Chocolate Chip Glazed Waffle Casserole

Serves 1-2 serving
Ingredients
3 Banza Gluten-Free Waffles in Buttermilk
1/2 cup of unsweetened almond milk
1/2 cup of egg whites
3 tbsp of RxSugar sugar-free maple syrup
1 chopped small apple
2 pieces of True Story Uncured Applewood Smoked Bacon
Toppings
1/2 cup of powdered monk fruit
1 tbsp of sugar-free maple syrup
1-2 tbsp of milk
Method
Preheat the oven at 350F.
Chop the bacon with kitchen scissors and cook lightly in skillet.
Mix all the unsweetened almond milk, pudding mix, egg whites and maple syrup.
Slice the waffles in half.
Add the waffles to the mix and let it soak, transfer to a baking dish.
Top with bacon
Bake for 20-24 minutes.
Mix the ingredients for the glaze.
Let them cool, top with sugar-free glaze and enjoy!
