Marry Me Sun-Dried Tempeh Casserole

Serves 1-2
Ingredients
1 whole cauliflower
1 block of organic tempeh
2 tsp of garlic powder
⅛ tsp of black pepper
2 tbsp of vegan cream cheese
1 pouch of I Eat My Greens Tomato Basil Coconut Soup
1 tbsp of vegan "parmesan" cheese
1/3 cup of sun-dried tomatoes
1/4 cup of chopped basil
Instructions
Preheat the oven at 350F.
Wash and steam the cauliflower until super soft.
Drain the excess liquid and chop like rice.
Slice the tempeh and season.
Air fry the tempeh for 18 minutes at 355F.
Blend the soup with rest of the seasonings and cream cheese.
Mix the cauliflower rice with blended sauce.
Serve in a baking dish and bake for 20 minutes.
Once baked top with tempeh, sun-dried tomatoes and parmesan cheese.
