Matcha Caramel Bites (Keto, Gluten Free)

If you are not into matcha just hold on and save this recipe for later! Or maybe you bought some matcha because it was the latest trend in food and in the wellness world, yeah... you didn't like it.


If that was you, well I totally understand! I believe that matcha is a love or hate type of food. Just like sardines, nopales or what about cilantro? Well, personally my relationship with matcha comes and goes and it always has to be prepared in very specific way for me to enjoy it.


Nutrition Tip:

Matcha is a great source of antioxidants, it improves brain function because it contains caffeine and an interesting fact about matcha is that in contains L-theanine! This means that it gives you the effect of caffeine (energy and our alertness) without that caffeine crash that sometimes we get with the consumption of coffee.


Another reason to have some is for the anti-cancer properties from the epicallycatechin-3-gallate (EGCG) and also promotes heart health for reducing LDL levels.


So we cannot argue the benefits of matcha. But that doesn't mean that those benefits are parallel to the taste, right?

Well, if you have some matcha in the back of your back of your pantry this is the chance to take some out and get use it! This recipe is for all of those who are struggling with the matcha love. A great way to get the benefits of matcha is also to use in on healthy treats!


For example, a few months back I baked some Matcha Chocolate Chip Donuts! They were a huge win among my family and friends. And now I'm coming back with this brand new recipe. A delicious No-Bake recipe with a great hint of caramel sauce.



This recipe is:

- Keto friendly

- Low Carb

- Gluten Free

- No Bake


Plus, we can get some variations. For example, ricotta cheese. If you want this recipe to be vegan you can substitute this for vegan ricotta cheese, also if you are dairy free, this caramel sauce is just perfect since we are not using any dairy on it.


Caramel Sauce:

- Full fat coconut milk

- Goat ghee

- Granulated monk fruit

- Vanilla extract


And on top we couldn't miss the chocolate chips, the ones I normally use are from ChocZero, they rock and love that they also have white chocolate chips that are keto friendly.


One important thing I want to tell you that even though this recipe is a no bake and freezer friendly recipe, the caramel sauce won't freeze. So you may want to keep these Matcha Caramel Bites in the muffin cups.


How are you going to make me like matcha?

The answer is simple, we are adding just some teaspoons of matcha, pure matcha, but we are trying to soften the flavor with the contrast of flavors. The great "cheesecake-ish" taste of ricotta plus some Organic Vanilla Whey from Natural Force or their Vanilla Bone Broth if you are dairy free. Of course, a try a vegan option if vegan! Just make sure you are using clean products.


We can't forget that the white chocolate chips and caramel sauce also hides the strong flavors of matcha. And if you are a matcha lover go ahead and add a few more teaspoons or an additional tablespoon. Go NUTS!


Now, are we ready to get started on this recipe? Here's what you'll need:

- 1 mixing bowl

- 1 silicone muffin mold of twelve

- 1 mixing spoon

- 1 measuring cup

- 1 small cooking pot

- 1 regular spoon


I think we are all set for this recipe! The only challenging thing about this recipe was taking the pictures but apart that, WE ARE GOOD!

Matcha Caramel Bites

Serves 12

Ingredients

- 2 cups (500g) of ricotta cheese

- 1 tbsp of matcha powder

Caramel Sauce

- 1/2 cup of canned coconut milk (just the solid)

- 2 tbsp of ghee (goat ghee or butter also works)

- 1/4 cup of granulated monk fruit

- 1/2 tsp of vanilla extract

Toppings

- 1/4 (42g) low carb chocolate chips

Method

Caramel

1. Heat a little pot in low, add the coconut milk and ghee.

2. Wait for it to melt and move constantly with a spoon.

3. Add the vanilla, stir and add granulated monk fruits.

4. Keep moving for 10 minutes in low.

5. Turn off the stove.

Matcha bottom layer

1. Mix all the ingredients and pour the mix into twelve silicone muffin cups.

Assembly

1. Using a tsp top each matcha cup with the caramel sauce.

2. Top with chocolate chips.

3. Freeze a couple of hours.

4. ENJOY!
