Matcha Pancakes with Strawberry Cashew Sauce

Serves 1-2
Ingredients
2/3 cup low carb pancake mix
3 tbsp of matcha
1/2 cup of egg whites
1/2 cup of unsweetened almond milk
2 tsp of vanilla
1/4 cup of granulated monk fruit
Strawberry Cashew Sauce
3 strawberries
1 tbsp of Artisana Organics Raw Cashew Butter
1/4 cup of sugar-free maple syrup (or regular one)
Method
Mix the pancake mix with monk fruit, vanilla, matcha, egg whites and almond milk. Stir well.
Pour over a pancake maker (like Dash) or cook in a skillet and cook for 4-5 minutes.
Heat the strawberries for 20 seconds in the microwave and mix with the rest of the ingredients.
Serve pancakes with sauce and enjoy!
