Meat-lovers Pizza Casserole (Paleo & Keto)

The other day I had an amazing date with one of my friends at a delicious pizza place, ordered a delicious pizza and some pasta, nothing paleo and keto though (it's about being flexible and balance!) but everything was ON POINT.


This recipe is inspired by the pizza we ordered, my choice by the way, gotta love a meat lovers kind of pizza right? Or at least that was us... gimme dat bacon! If you are like me then you are going to LOVE this casserole.



No gluten, dairy or grains are involved in this recipe. Instead all the delicious ingredients and yes, we are keeping it nutrient dense! Did you know that the most nutrient dense foods are usually animal foods?



In this recipe we are focusing on quality ingredients. No sugars, no syrups, no grains. Just flavor and nutrients in a simple and comforting pizza casserole, can't get better!

How to make this super easy Meat-lovers Pizza Casserole:

  • Shredded chicken

  • Almond based cream cheese (or regular)

  • Eggs

  • Sugar-free tomato sauce

  • Bacon (I used this)

  • Spicy sausages (I used this)

  • Pork panko

  • Dried parsley

  • Sea salt

  • Dried garlic

  • Black pepper



You can see that the recipe is simple, and all the ingredients are easy to obtain. I have the luck that near my house there's a place that focus on all chicken products and I usually buy shredded chicken from them already seasoned.



Since this is also a gluten free, keto and paleo recipe the ingredients are key. That's why I used Pederson's sausages and bacon; no sugar added, no MSG or antibiotics, just the best products, I really love them.


And some tomato sauces have some refined oils and sugar added, in this case I love using Otamot sauces when I don't have homemade sauces, this is my go to. You can use code PURELYHEALTHY10 for Otamot discount.



But here are some meal prep chicken hacks!

  • Buy a rotisserie chicken, shred it and you can freeze it or use it for this recipe.

  • Broil or slow cook a bunch of chicken breasts, shred them and freeze.

  • Buy your shredded chicken and freeze to have a good source of protein at any time or day!


This recipe doesn't require expert cooking skills, anyone can make this recipe and enjoy! Maybe you are hosting a dinner party? Bruch? Or just meal prep! This is a recipe that you are going to love and probably will make on repeat!


How to make this super easy Meat-lovers Pizza Casserole:

  1. Preheat the oven at 350F.

  2. Bake bacon for 10 minutes (it doesn't need to be fully cooked).

  3. Beat eggs, seasonings, cream cheese room temperature and tomato sauce.

  4. Add shredded chicken.

  5. Pour the mix into a greased 8x8 baking dish.

  6. Top with pork panko, bacon and cut sausages.

  7. Bake or air fry both for 35 minutes.

  8. Cut into 9 equal squares.

  9. ENJOY!



Pretty easy to make, huh? Happy to create recipes that doesn't involve a lot of steps, processes or messy dishes. We overall used TWO, the mixing bowl and the baking dish. Simple as that!



Ideas to serve this Meat-lovers Pizza Casserole:

  • As breakfast along with some pico de gallo or roasted veggies.

  • On a loaded and colorful salad.

  • Alone, as a snack (pizza for snack. YES!)

  • Roasted veggies or potatoes

  • Cauliflower rice

  • Jicama fries

The plating of this recipe is another favorite part of it! All the veggies, here you can add your favorite veggies or the ones you have in your fridge, for my greens and tomatoes are a staple so those went down. Added some asparagus, they are simple and elegant!

Ingredients

  • 2 cups of shredded chicken

  • 4 oz. of almond based cream cheese (or regular)*

  • 5 eggs

  • 1/2 cup of sugar-free tomato sauce

  • 3 slices of bacon (I used this)

  • 2 spicy sausages (I used this)

  • 1/2 cup of pork panko

  • 1 tbsp of dried parsley

  • 1 tsp of sea salt

  • 1/2 tsp of dried garlic

  • 1/8 tsp of black pepper


Method

  1. Preheat the oven at 350F.

*If you don't want to use almond based cream cheese or cream cheese you could use coconut cream (the fat part and no sugar added).
