Mocha Chocolate Chip Keto Waffles (Paleo Friendly!)

Waffles and cookies, two of my favorites! I couldn't resist myself from doing this epic mashup that will be on repeat and probably will be my next breakfast or snack obsession... easy to make and extremely delicious while being secretly healthy as well!


Keto cookie mix with a delicious combination of coffee in a perfect waffle shape! One of the best parts of this recipe is super easy to make, trust me... so basically is just mix, pour and let the waffle maker do her thing, extremely easy! These waffle cookies are also gut friendly since we are skipping the gluten and all the inflammatory and refined sugars.



About these Mocha Chocolate Chip Keto Waffles:

Let's go beyond the classic cookie with chocolate chips and let's create a fusion of flavors that nobody will be able to resist! I also wanted to include a twist, a fun a de delicious twist by just using Good Phats as my base, a chocolate chip cookie mix that will make things ever easier.


This cookie mix just saves us a lot of steps, ingredients and it also keeps things low carb. We are just adding some eggs and coconut milk for the waffle base along with some gut love by adding some collagen coffee blend.


Key Ingredients:

Adding some protein powder for extra flavor and a satisfying filling. I have been also obsessed with the Marigold Vanilla Latte Protein Coffee, their ingredients are always the best and the taste is always delicious too, this smooth vanilla is basically a healthy, dreamy and indulgent vanilla latte (keto and gluten free!).


Basically a fail proof recipe, only mixing and pouring type of recipe. Also we are keeping it super simply since we are using only 4 ingredients overall!



Coffee! For the coffee touch I simply prepared the protein coffee from Marigold Vanilla Latte Protein Coffeethat adds some collagen, gut love and all the flavor! Plus some amino acids.


Secretly healthy and gut friendly! You just need to try this and if you add some greek yogurt with probiotics would be having a very complete recipe for breakfast or snack! I enjoyed these in the afternoon after my CrossFit session.

The end result

I'm naming this my new favorite breakfast! The chocolate chips of the cookie mix along with the vanilla collagen protein coffee combination is just perfect and goes so well topped with greek protein for extra protein.


The cookie base is just perfect and along with the coffee, is just another level that makes your mornings even better and brighter... I mean, chocolate chips and waffles? Yes please!




You might want to save this recipe because a second batch might be needed here! I shared some of the waffles with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.

Pro tip: You can also drizzle some melted chocolate to make them even prettier and tastier!

Mocha Chocolate Chip Keto Waffles

Serves 8 servings


Ingredients

  • 1 cup of Good Phats Keto Cookie Mix (PURELYHL for discount)

  • 2 scoops of Marigold Vanilla Latte Protein Coffee (PURELYHL for discount)

  • 4 eggs

  • 1/2 cup of unsweetened coconut milk

Topping (optional)

  • 3/4 cup of greek yogurt

  • 2 tbsp of low carb chocolate chips


Method

  1. Preheat the waffle maker.

  2. Mix the cookie mix with the protein coffee and slowly add the eggs and coconut milk.

  3. Stir well and pour about 1/4 of the waffle batter into the waffle maker and let it cook for 6 minutes.

  4. Serve and add your toppings of choice.

  5. Enjoy!
