We are showing some love to all my mocha lovers... a classic we all love! And since we are adding all the textures, flavors and chocolate chip and coconut granola bars as our base that just takes these cheesecake bars to another level!
But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Pamela's Whenever Chocolate Chip Coconut Bars as our base and some white chocolate chips because... why not!? Double chocolate... double yumminess.

Soft and flavorful! The contrast of flavors and extremely creamy is just amazing, the cookies here makes the soft chocolate and coconut base have a great contrast of textures that works perfectly. And of course, a delicious creamy cheesecake filling we all love!
Melts in your mouth! It's soft and chewy, the chocolate coconut base with the creamy mocha cheesecake filling is just a divine combination for that creamy texture that melts.
Plus the white cholate chips and strawberry as our topping is just perfect, just take these to the next level, makes them even harder to resist.

Mocha Coconut Strawberry Cheesecake Bars

Serves 9 servings
Ingredients
Base
1/3 cup of egg whites
Topping
1 block of cream cheese
1 tsp of vanilla extract
2 tbsp of instant coffee
1 tbsp of cacao powder
1/3 cup of alullose
3 tbsp of Let's Bake Belive low carb white chocolate chips
1 cup of strawberries
Method
Preheat the oven at 350F.
Mix the ingredients for the base and pour into a 8x8 silicone baking dish.
Bake for 18 minutes.
Mix the cream cheese, alullose, coffee, vanilla and cacao and spread over the baked and cooled base.
Add the strawberries and white chocolate chips
Cut into 9 pieces and enjoy!
