Mocha Pecan French Toast Casserole (Keto & Paleo)

Hold on to your socks because this recipe might knock them out! This french toast casserole is coming at you to rock the world of your tastebuds. It did for mine and this is a recipe that's going to be on repeat.


French toast has always been a comfort food for me. My dad used to made it for me when I was growing up all the time, but that's not only the reason why it's special... I used to eat the ones that were boxed in the frozen section of the super market until my dad made my ever first homemade french toast.



So ever since this recipe has been part of my soul and heart. Nothing beats a recipe that's made from love and homemade. So I thought I might create a recipe that brought amazing memories with my own personal touch and for you to share with your loved ones!



The good thing about this recipe is that it feeds a crowd in a more effortless way than making individual french toast... we are saving the process of soaking each bread into the eggs mix and cooking each one of the for 4-5 minutes each.



For this recipe I simply baked a paleo and low carb loaf using this mix that you can get from Amazon or using your favorite bread, it's up to you! I decided to bake my own bread and to add to the mix some more ingredients to increase the flavor such as cinnamon plus, the texture of homemade bread is always better!

For the casserole, I just blended all these ingredients and pour them on top of the bread, you'll notice that this recipe is EXTREMELY easy and flavorful! The combination of coconut cream, candied pecans, chocolate chips and coffee is just absolutely delicious!

Easy peasy and delicious Mocha Pecan French Toast Casserole!

  1. Cut the the bread into 1/2 inch cubes and place them in a 8x8 baking dish.

  2. Mix all the ingredients for the casseroles but the chocolate and pecans.

  3. Pour the mix over the bread and top with pecans and chocolate chips.

  4. Bake for 30 - 35 minutes.

  5. Let it cool down, slice into 9 pieces and enjoy!



It's pretty much automatic and the recipe is just divine to share on those weekends with your family or brunch with your friends! I'm sure they will appreciate the homemade recipe and the combination of flavors.

Mocha Pecan French Toast Casserole

Ingredients

Bread

  • 1 + 1/4 cups of paleo / keto sandwich baking mix (I used this)

  • 2/3 cups of egg whites

  • 2 tbsp apple cider vinegar

  • 1/4 cups of water

  • 1 tsp of cinnamon

  • 1/4 cup of monk fruit

Casserole


Method

Bread

  1. Preheat the your oven at 350.

  2. Mix all ingredients and let it sit.

  3. Pour the dough into a baking loaf.

  4. Bake for 30-40 minutes.

  5. Set aside and let it cool!

Casserole
