Mocha Ricotta Waffles (Keto & Gluten Free)

I have to be honest, my best recipes are the ones under pressure of cleaning out the freezer or fridge (true story), along with some good jams you might caught me in the kitchen whipping something GOOD.


For this recipe I included some of my favorites; coffee and chocolate. Who also wants to join this waffle party?



As me, probably you are going to fall in love with these Mocha Waffles, made with simple and nourishing ingredients that together work in a perfect symphony. Picky eater approved because I mean, who doesn't love a good mocha waffle?



You won't notice that this recipe is healthy!

This recipe is also:

  • Low carb

  • Keto friendly

  • Mess free

  • Easy

  • Fail proof



I used some of my baking staples, all gluten free and low carb. The perks of using these ingredients is not only for those who are sensitive to gluten but to have a nourishing option since regular flour lacks nutrients.



Almond flour, on the other hand provides fiber, vitamin E, manganese, magnesium, copper and phosphorus... naturally! So it's just a simple way to make healthier baked goods, or in this case waffles!


Simple, minimal ingredient waffles



Keeping it delicious but also low carb and keto friendly. Each waffle has only 2.4 grams of total carbs! All thank to the simple ingredients we use, hello almond flour and the volume of ricotta cheese and eggs.



To keep it sweet, I use granulated monk fruit Lakanto. My favorite keto sweetener, plus we can get a discount whenever we use the code "PURELYHL" on out check out... YAY!



Also, on the other note these waffles are extremely easy to make, you only need your blender and your waffle maker. So the mess is minimal and everyone can prepare these waffles and have them for breakfast, lunch... or dinner!



The easiest waffles EVER!

  1. Add all the ingredients into a blender and mix well, approximately 20 seconds.

  2. Pour about 1/3 cup of the mix into a mini waffle maker and cook for 4 minutes.

  3. Serve with keto maple syrup, cinnamon and golden monk fruit.

Freezer friendly waffles too! I froze mine inside a plastic bag and enjoyed them after reheating them in the microwave, air fryer or oven for a couple of minutes or seconds in the case of the microwave.



Reheating instructions

  • Air fryer: Preheat it for 5 minutes at 350F. Place the two waffles for 1 minute.

  • Oven: Preheat it for 5 minutes at 350F. Place the two waffles for 3 minute.

  • Microwave: Heat them for 30 seconds.

Mocha Ricotta Waffles

Serves 12


Ingredients

Base

  • 2 cups (200g) of ricotta cheese

  • 1/2 cup of almond flour

  • 1 tsp of cinnamon

  • 1/3 cup of granulated monk fruit

  • 2 tbsp of instant coffee

  • 4 eggs

  • 2 bars (60 grams) low carb chocolate bars


Method

  1. Preheat the your waffle maker.

  2. Add all the ingredients into a blender and press for 30-60 seconds, until chocolate is all chopped up.

  3. Pour about 1/3 cup of the batter into the waffle maker and cook around 8 minutes each.

  4. Serve and enjoy!

*You can freeze them and reheat them in your microwave for 25 seconds, oven at 350 for 8 minutes or 4 minutes in your air fryer.
