Okay, I am all about a good easy but comfort food that at the same time is also super flavorful. Using some simple and basic ingredients here that you'll just have to make this recipe even twice since it's simple and so flavorful.
An easy to make Nacho Salsa Breakfast Quiche using low carb tortillas, and of course some queso. In this occasion I kept this recipe dairy free by using my favorite dairy free queso brand and also some restaurant style salsa to add that extra Mexican vibe to this quiche.

This recipe is super comforting and with a twist of a Mexican classic! Nachos are one of my Mexican favorite but thinking on all the process it takes to make them made me rethink the method in other to still enjoy the delicious taste and comfort without taking that long in the process.
I decided to transform it into a delicious and simple quiche... breakfast quiche and this is a game changer. Perfect for meal preps too!
A low carb, comforting and gluten free quiche, no gluten and high protein recipe. We are adding salsa (of course!), some queso, low carb corn tortillas and some eggs into this recipe.
The key to a delicious Mexican recipe is a good salsa so you can also try to make my own (recipe to my green salsa HERE) that is also greta for enchilada or this quiche recipe. Who doesn't love a good comforting meal, right?
What's in this Nacho Salsa Breakfast Quiche?
Well, besides the eggs and salsa we are using some low carb corn tortillas to add that nacho factor and of course, queso. In this occasion I'm using dairy free queso from Good Foods, brand that I have been loving for while.
Eggs are great protein option to add into your lifestyle! As a nutritionist I know that healthy eating should be sustainable and convenient without sacrificing any taste. Eggs are just a great source of protein, vitamin B12 that's is essential for healthy blood and red cells, omega-3 fatty acids and lutein.

Okay, so what makes nachos what they are is the tortilla and the cheese, so yeah, we are using low carb tortillas, dairy free queso and some salsa; it can be green or red.... this time we are going chunky and restaurant style!
Of course eggs, the base of this quiche and that also adds some vitamins, nutrients and protein. Nachos are typically topped with some more veggies, beans, corn etc. You can have fun with this recipe but I kept it simple but just with the right enough flavor.
And for spices, adding real salt, pepper and garlic really amps up any taste and aroma to the recipes; a must and another sneaky way to get some micronutrients such as minerals from the sea salt.

A cheesy and flavorful nacho quieche for all my Mexican food lovers, super comforting. The touch of the queso an tortillas adds such a nice touch and flavor and texture to the recipe... plus who doesn't love nacho, right?
I enjoyed mine for dinner or lunch, with some extra greens as a side and avocado on the side... but you can also add some extra salsa as well and you will have such a great bite to enjoy... and healthy too!

Nacho Salsa Breakfast Quiche

Serves 8 servings
Ingredients
10 low carb corn tortillas (used Susalia Delgaditas)
1/2 cup of Rojo's Restaurant Style Salsa
6 eggs
1 cup of dairy free queso
1/2 tsp black pepper
1 tsp of real salt
1 tsp of garlic
Toppings
Cilantro
Method
Preheat the oven at 350F.
Bake the tilapia with lime juice and seasonings to taste for 27 minutes.
Transfer the baked tilapia into a mixing bowl and using your spatula shred the tilapia.
Add green salsa, salt, black pepper, garlic and eggs and mix well.
Incorporate the crushed tostadas and pour the mix into a greased 8x8 baking dish.
Using your cheese knife cut the cheese into squares and top with casserole with it.
Bake for 40-45 minutes.
Let it cool down, cut into 9 pieces.
