Neapolitan for a reason bring back so many summer memories and since we are in the season I thought I might do a fun version using some seasonal fruit such as strawberries, chocolate and of course vanilla... but in this occasion I'm adding cookie to the formula!
This is not the usual semifreddo, the inspiration and the idea is there but this is just another level. I'm focusing on my specialty, creative ways to make healthy foods tasty, you are going to love this version using ricotta cheese and a mix of greek yogurt for that creaminess and protein.

This recipe is super easy to make, creamy and such a simple recipe to make, no churn needed. Just your blender and a couple of ingredients. These are great to prepare a part of your sweet meal prep that will help you stay on track on your healthy lifestyle.
Part of the neapolitan recipe, if you are still not familiar with this, they are just vanilla, chocolate and strawberry ice cream. For this recipe we are using natural flavors, real strawberries, chocolate and for the vanilla I'm also using some vanilla protein from Nuzest that also uses simple ingredients.
Adding some protein powder for extra creaminess and a satisfying feeling. This is an old trick that I like to incorporate into my recipes to add volume, taste and some extra nutrients, amino acids for our muscles and essential functions.
Cookies, the crunch factor! I just can't keep a recipe basic. I like to add MY factor and in this occasion I wanted to add some paleo cookies, for the win, taste and crunch! You are simply love the combination of textures.
For the base of this cheesecake I used coconut flour and a combination of coconut, and a scoop of Nuzest that also adds some special density. But you can replace it for extra coconut flour too.

Neapolitan Birthday Cookie Cheesecake

Serves 9 servings
Ingredients
Base
Cheesecake Filling
2 tbsp of cacao powder
1/2 cup of strawberries
16 cookies paleo birthday cake soft baked cookies (used Lesser Evil)
1 block (190g) of cream cheese
1 cup of ricotta cheese
1/2 cup of granulated monk fruit (PURELYHL for discount)
Topping
16 cookies paleo birthday cake soft baked cookies (used Lesser Evil)
Method
In a bowl mix all the dry ingredients for the base.
Add the water to the mix HOT. Mix well.
Spread and press the mix in a silicone 8x8 dish and refrigerate.
Blend the cream cheese with ricotta cheese, vanilla and granulated monk fruit until smooth.
Place 1/3 cup of the mix in two different bowls and add the strawberries to the leftover cream cheese mix of the blender.
Blend the leftover cream cheese with the strawberries and set aside.
Add the cacao powder to one of the cream cheese bowls you separated.
Pour the strawberry blend on top of the base.
Add the cacao mix and do some swirls using a knife of spoon. Repeat this step with the plain mix (vanilla).
Top with cookies and refrigerate for a few hours or overnight.
Cut into 9 pieces and enjoy!
Notes
* You can use egg whites or eggs. If you decide to use egg whites use 1 cup, or 2 whole eggs and skip the water.
