Hello everyone! Hope you are having a great day, today I will encourage you to do something that will make your heart skip a beet! Do something you love, call somebody, give a hug or bake something with BEETS!
In this recipe I decided to feature once again beets, a nutrient dense veggie that we normally don't incorporate into our diets. The good thing about beets is its how versatile they are, from sweet to savory recipes these guys are fantastic.

Seed cycling is a thing I've been doing for almost two years, if you want to read more about this topic check out my full blogpost HERE! Basically is has been working wonders for me personally, from healing my hormonal acne to making sure I'm getting the appropriate nutrients for each phase of my fertility cycle.
This recipe doesn't only include beets are the main star ingredient but also those seeds for the follicular phase: pumpkin seeds and flax seeds, both nutrient dense. They provide zinc, magnesium and vitamins from the B complex.
You'll get a some and creamy consistency from the combination of ingredients, beets and coconut flour to add that volume, and ground flaxseeds and pumpkin seeds will do that job as well. As healthy fats we'll be coming from the seeds, omega-3's specially from flaxseeds.
If you are vegan then you probably know that flaxseeds are one of the main sources of vegetable omega-3s!
And for the sweet touch, I used monk fruit, Lakanto is my favorite brand (use PURELYHL for discount!) This is a staple in my house, for real! Another key ingredient to get that nice pop of sweetness in the recipe will be cinnamon and pili nut butter, nut butter that's naturally sweet. If you don't have pili nut butter you can replace this with coconut butter since both are pretty similar in consistency.

No Bake Beet Blondies

Serves 12
Ingredients
- 3/4 cup of ground flaxseed
- 3/4 cup of raw pumpkin seeds
- 1 cup of coconut flour
- 1/4 cup of beet powder
- 1/3 cup of granulated monk fruit (PURELYHL for discount)
- 1 tsp of cinnamon
- 1 + 1/2 cup of nut milk or water
- 4 oz. of pili nut butter or coconut butter
Method
1. In a blender add the raw pumpkin seeds and blend until you get a type of flour.
2. In a bowl add all the dry ingredients and mix well.
3. Add the melted pili nut butter or coconut butter.
4. Add hot water and mix well.
5. Pour the mix into twelve silicone muffin cups.
6. Freeze for at least 3 hours, ENJOY!
