"Oatmeal" Cookie Cheesecake Bars (Low Carb)

Oh guys, the no bake cheesecake bars have been going nonstop! They are just perfect for summer season since turning on the oven feels like a big no no for me... these cheesecake bars are just what you and I need to beat the heat in the sweetest way.


No bake gut friendly and delicious cheesecake! One of the best parts of this recipe is the no bake part... so basically is just mix, pour and refrigerate type of method, extremely easy! But these cheesecake bars are gut friendly since we are working with beef gelatin, organic cream cheese with probiotics and no gluten!



About these "Oatmeal" Cookie Cheesecake Bars:

These are just every oatmeal cookie fan dream! But with that I also wanted to include a twist, a fun a de delicious twist by just adding some of the keto macaroons and cranberry seeds to get that oatmeal feeling while keeping it low carb.


To add that extra crunch factor of this recipe I also included some of the Marigold Oatmeal Cookie Keto Bars, such a game changer! And it really brings up that extra taste of oatmeal and that texture that takes these cheesecake bars to the next level.


Key Ingredients:

Adding some protein powder for extra creaminess and a satisfying filling. I have been also obsessed with the Nuzest Smooth Vanilla Plant Based Protein, their ingredients are always the best and the taste is always delicious too, this smooth vanilla is basically a healthy, dreamy and indulgent vanilla milk shake (keto and gluten free!).



Oatmeal Bars and grain free, the crunch factor! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. The base is soft and the filling of these is creamy thanks the the organic cream cheese... also source of probiotics!


I also used some grain free cereal to add that crunch. My favorite ones are Magic Spoon (purelyhealthyliving for discount) or for a paleo version you can use Love Bird.

The base of the Cheesecake:

The base is made with simple ingredients and Nuzest Smooth Vanilla pea protein (or coconut flour) to keep it nutrient dense and gluten free. Since we are not using any eggs we are using beef gelatin as our glue for these bars, it's just my favorite ingredients when it comes to no bake recipes.

Soft and flavorful! The contrast of flavors and textures is just amazing, the toppings are just divine... the protein bars with the cookies work perfectly with the creamy cream cheese filling of this cheesecake but the good crunch of the cereal.


Melts in your mouth! The keto macaroons from the mix and bars bring up that amazing crunch factor too that makes these even more satisfying.



You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to bake some more.

Pro tip: You can also drizzle some melted chocolate to make them even prettier and tastier!

"Oatmeal" Cookie Cheesecake Bars

Serves 9 servings


Ingredients

Base

  • 1/4 cup of coconut flour

  • 1/2 cup of Nuzest Vanilla Smooth Pea Protein

  • 3 tbsp of beef gelatin

  • 1 cup of hot water

  • 1 tsp of cinnamon

  • 1/3 cup of granulated monk fruit

Filling

  • 1 block (8oz) or organic cream cheese

  • 1/2 cup of unsweetened almond milk

  • 1 + 1/2 cup of grain free cereal (like Magic Spoon purelyhealthyliving for discount)

  • 1 tsp of vanilla extract

  • 2 keto chocolate macaroons (used these)

  • 1/4 cup of granulated monk fruit

Toppings


Method

  1. Mix the coconut flour, beef gelatin, monk fruit, pea protein and cinnamon.

  2. Add the hot water and mix well.

  3. Transfer the dough into a 8x8 silicone baking dish and press the dough evenly.

  4. Refrigerate for 10-15 minutes.

  5. Blend the cream cheese, monk fruit and almond milk for the filling and fold with the grain free cereal and chopped macaroons.

  6. Spread the filling over the base.

  7. Cut the bars and add the rest of the toppings.

  8. Freeze a few hours or overnight and enjoy!
