Oleato Blueberry Olive Oil Muffins

Serves 12 muffins


Ingredients

  • 1 1/4 cup of gluten-free self-raising flour

  • 2 scoops of Chike Nutrition Sweet Protein Coffee

  • 2/3 of RxSugar alullose (MARIA20 for discount)

  • 3 eggs

  • 3 small bananas

  • 2 tbsp of Kosterina Crushed Blueberry Vinegar

  • 2 tsp of vanilla extract

  • 1/4 cup of vanilla greek yogurt

  • 1/4 cup of Kosterina Extra Virgin Olive Oil

  • 1 cup of blueberries


Instructions

  1. Preheat the oven at 350F.

  2. Mix all dry ingredients in a bowl.

  3. Place the bananas in a bowl and microwave for 1:30 minutes.

  4. Add the eggs, vanilla extract, blueberry vinegar, olive oil, bananas and mix well with the dry ingredients.

  5. Fold in the in the blueberries.

  6. Transfer the batter into 12 silicone muffin cups.

  7. Bake for 30-32 minutes and let them cool down.

  8. Let it cool down, slice and enjoy!
