Even though my birthday passed I'm a firm believer that every day should be celebrated, plus there's something about sprinkles that take every recipe to the next level am I right? Well, these gluten free and low carb waffles will be perfect to celebrate the joy in life... and to increase it!
Besides believing in the power of sprinkles and that life should be celebrated all year, every day I also believe FIRMLY that breakfast foods can also be eaten at any time of the day... I'm definitely team breakfast for dinner... AKA brinner. Who is also the same way?
Well, this recipe super easy to make and to prepare as your meal prep, I used Super Fat Pancake & Waffle Mix (my latest obsession), this is gluten free and low carb. I just followed the instructions of in the package but added some cacao powder to create that "oreo" effect.
The other great thing about this recipe is that you can also get a discount on any of Super Fat products by using the code "PURELYHL". From their keto certified cookies, brownie mix and their nut butters that have protein.
They really have to offer different and great quality products. This waffle mix has been on repeat, I made them in batches and freeze them, this way they will be ready to eat at any moment!
Here are the ingredients I used for these Oreo Birthday Cake Waffles:
Super Fat Pancake & Waffle Mix ("PURELYHL" for discount)
Eggs
Coconut oil
Almond milk
Cacao powder
Unsweetened greek yogurt
Vanilla powder
Granulated monk fruit ("PURELYHL" for discount)
Dye free sprinkles (used these)
So ingredients are wholesome without any weird additional ingredients. For example, no artificial colors or flavors since we are using real vanilla powder and dye-free sprinkles. Less inflammatory ingredients of like wheat and sugars.
Instead of subtracting add better ingredients and replace the ones that may cause you inflammation. There's always a healthier replacement when it comes to our favorite recipes, and to be honest these waffles are the perfect example along with other recipe here in the blog!
This is how I made these super easy Oreo Birthday Cake Waffles:
Preheat the your waffle maker.
Mix the ingredients for the waffles; almond milk, coconut oil and eggs.
Pour about 1/4 cup of the batter into the waffle maker and cook for 4-5 minutes.
Let them cool down.
In a little bowl mix the greek yogurt, monk fruit, vanilla and sprinkles.
Top two of the waffles with the greek yogurt mix and top with the other half of the waffles.
Freeze or enjoy at the moment.

Ingredients

1 tbsp of coconut oil
2 tbsp of almond milk
1 tbsp of cacao powder
2/3 cup of unsweetened greek yogurt
1 tsp of vanilla powder
3 tbsp of granulated monk fruit ("PURELYHL" for discount)
3 tbsp of dye free sprinkles (used these)
Method
