If you have been following my Instagram for a while now you may already know that one of my most beloved kitchen tools is my air fryer and before getting it I was so hesitant! Now I use it at least six times per week, it's that good!
And very similarly, I was always having second thoughts about getting a waffle maker, until I finally decided to get one since it was on sale on Amazon. It was just the universe telling me to get one once in for all!
Hopefully I will be using it on repeat and will share tons of fun ideas but today I'm sharing my very first recipe from my very first attempt of making waffles with it. And sure, we are keeping it seasonal by making them Chai spice waffles!
I'm a chai girl, any time of the year but fall is just a special call for everything chai and warm. And I'm also a paleo-ish low carb girl because that's how my body likes it!
This recipe is super simple and it makes a great recipe to save for those meal preps! And they are very versatile!

Waffles go beyond being just a breakfast food, they can also be a great snack or afternoon treat! Toppings make the difference, plus there are no rules about eating "breakfast" foods any time of the day!
Simple, minimal ingredients!
Almond flour
Coconut flour
Ghee
Egg
Chai spice
These ingredients are just staples from my pantry and I really encourage you to stock on these since they are extremely versatile and they make amazing paleo and low carb recipes. Plus they make a great healthier option, not as inflammatory as refined sugars, oils and flours.

Anyways, these waffles are also extremely easy to make!
Preheat your waffle maker.
Mix the dry ingredients.
Add the eggs and mix well.
Add the melted ghee, mix again.
Add 3 tbsp of water or almond milk.
Divide the dough into 7 balls.
Cook them separately for 4-5 minutes each.
So as you can see, super easy to make and quick too! You can even leave the batter ready overnight and cook them in the morning if you prefer it that way. Personally I cooked it and then freeze them.
For toppings I liked them with a sprinkle of granulated monk fruit, cinnamon and even some nuts but remember that the ideas are endless! You can also add some Suntella from Lakanto, which is just like nutella but keto! SO GOOD!
You are going to simply love them on their own too! Specially if you bake or air fry them to get a crispier outside. Simply epic guys! For real. I'm definitely excited to share more waffle recipes!

Paleo Chai Waffles

Ingredients
Base
1/2 cup of almond flour
1/2 cup of coconut flour
2 tbsp of melted ghee
3 egg
1 tsp of chai spice
1/4 cup of granulated monk fruit
Method
