We are showing some love to all my peanut butter and Smores enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the goat cheese and a touch of raspberries to add volume and a nice touch along with a creamy elderberry cheesecake filling.

Keeping it extra delicious, healthy and just epic by using some fresh strawberries instead of actual jam, and to make it even healthier we are using sugar-free marshmallows from Choc-Zero, some peanut butter and of course some of these fantastic Hero Bread Low Carb Burger Buns. The base is made with simple ingredients, some peanut butter, Hero Bread Low Carb Burger Buns, strawberries and to keep things sweet you can sprinkle some extra RxSugar alullose, and of course, some sugar-free marshmallows, used ChocZero.
Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using abullone or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat peanut butter jelly sandwiches another way! These are super easy to make and just super yummy, plus better for you. I have been trying to increase some fiber in my diet so the strawberries here and the high fiber Hero Bread hits the spot to improve digestion as well.
The creamy and gooey filling with the toasted bun after grilling it it (you can also bake it) it makes these even better and more magical... and a great companion to a creamy latte! You'll love these!

Peanut Butter Jelly Smores Sandwich

Serves 1 serving
Ingredients
1 Low Carb Burger Bun (used Hero Bread)
1/2 cup of sliced strawberries
4 sugar free Marshmallows
2 tbsp of peanut butter
Method
Place the strawberries on top of one of the half of the buns, followed by the marshmallows and peanut butter.
Top with other half of the bread and grill it on a skillet of dash griddle until marshmallow has melted.
Enjoy!
