Snacks are always a staple in my freezer, I love having them ready for any occasion and these bars are just the perfect snack and use for all the peaches I was gifted by a friend of the family!
This recipe is super easy to make, with a crunchy cereal base with matcha cacao butter and a creamy peach filling! All you need is a mixing bowl and your blender, a no brainer and hard to fail type of recipe.
About these Peach Matcha Cereal Bars:
For the base of these bars I used some of One Degree Sprouted Oat O's, these are gluten free and easier to digest since they are sprouted... plus this type of grains tend to have more nutrients thanks the process they have!
The cereal was combined with a mixture of cacao butter, coconut butter and matcha... anyone else is already salivating? Just a magical combo that adds such a great crunch and base to the peach filling.
The flavor is just amazing and the textures as well!
The creamy topping of these bars is made by simple ingredients: I only used some frozen peaches, unsweetened cashew milk or any milk you prefer along with some vanilla extract and a touch of hemp seeds to help with the density and creaminess.
Healthy, indulgent and easy to make! You know that I'm always down for a good recipe challenge and this was a great one... loads of peaches to use before they go bad and a recipe that will be delicious and healthy at the same time.
The sugar used here is granulated monk fruit from Lakanto, my ultimate favorite when it comes to sweet; baked goods or no bake recipes. It's just super easy to use and it doesn't have a weird aftertaste compared to other sweeteners.
Plus we are also keeping it gluten free by using a the cereal, One Degree! Their oats are gluten free. This recipe will also provide healthy fats from the cacao and coconut... and antioxidants from the peaches!

Peach Matcha Cereal Bars

Serves 10 servings
Ingredients
For the base
1 + 1/2 cup of One Degree Sprouted Oat O's
5 tbsp of cacao butter
5 tbsp of coconut butter (or coconut oil)
4 tsp of matcha (used Pique PURELYHL for discount)
1/2 cup of granulated monk fruit (PURELYHL for discount)
For the Topping
3 cup of frozen peaches
3 tbsp of hemp seeds
1 tsp of vanilla extract
1/2 cup of unsweetened nut milk
1/4 cup of granulated monk fruit (PURELYHL for discount)
Method
Melt the coconut butter with coconut oil and dissolve the matcha.
In a bowl add the cereal, granulated monk fruit and mix well.
Spread the cereal mix in two loaf pans and freeze for a couple of minutes.
Blend the peaches with hempseeds and monk fruit.
Pour over the cereal base and freeze again.
Cut into 10 pieces and enjoy!
