Peanut Butter Banana Bread Protein French Toast

Serves 6 thick slices


Ingredients

For the Bread

French Toast Mix

  • 1/2 cup of egg whites

  • 1/2 cup of unsweetened almond milk

  • 5-6 packs of stevia

  • 1 tsp of cinnamon

  • 1 tsp of vanilla extract

Toppings

  • 1 tbsp of peanut butter

  • 1 tbsp of melted dark chocolate

Method

  1. Preheat the oven at 350F.

  2. Mix all the ingredients for the banana bread and bake in a baking loaf pan for 25 minutes. Let it cool down and slice into 6 pieces.

  3. Mix all the ingredients for the French toast and soak each slice into the mix and cook in a ghee greased skillet for 3-4 minutes per side.

  4. Serve with toppings and enjoy!


Method

  1. Preheat the oven at 350F.

  2. Mix the bread with whipped cream, almond milk, monk fruit, cashew butter, vanilla and eggs.

  3. Pour into a 8x8 baking dish and top with strawberries and pecans.

  4. Bake for 20-25 minutes, let cool, cut into 9 pieces and enjoy!
