Peanut Butter Sandies (Keto friendly)

Now this is a recipe I'm pretty excited to share, remember those iconic pecan sandies? Well, I created a variation, but instead of pecans we will be using peanuts. So this one goes for all the peanut heads out there! Plus, most of us love peanuts!


The thing here is that we are going to use peanut flour, or peanut butter in powder. This byproduct of peanuts can be easily found at any grocery store and it's a great hack when it comes to recipes, and you know how much I love hacking recipes!


The consistency of these cookies is like you'll expect from pecan sandies or shortbread cookie, soft and creates crumbles. Not chewy but still delicious, these cookies were meant to dip into your favorite latte, nut milk or coffee.


These cookies are:

- Keto friendly

- Low carb

- Gluten free

- Lactose free


Not paleo, at least if you follow a strict paleo lifestyle since peanuts (and cashews) are considered and they are really technically a legume, yes, the same family of beans and chickpeas. Who would have guessed?


You won't be needing a lot of your time to bake these cookies, probably 40 minutes tops! Considering oven time. You can store these on your freezer once they are cooled. And have fun with the additional toppings! I used some low carb chocolate and some super color powder from Supercore Foods.

Peanut Butter Sandies

Serves 11 cookies

Ingredients

- 1/2 cup of almond flour

- 3/4 cup of peanut butter flour (PURELYHL for discount)

- 1/2 cup of monk fruit

- 1 tsp of cinnamon

- 1 tsp of baking powder

- 1 egg

- 1/4 cup of ghee

- 2 tbsp of keto friendly caramel syrup

- 1/3 cup of peanuts for topping

Method

1. Preheat the oven at 350F.

2. Mix your dry ingredients in a bowl.

3. Add the wet ingredients and mix well.

4. Form eleven cookies and put them in a baking tray.

5. Top with peanuts and bake for 18 minutes.

6. Let them cool.

Optional: Dip cookies in chocolate and top with supercolor powders.
