Perfect Almond Butter Bites (Paleo, Vegan)


Hello hello there! Hope you are having a wonderful week, a restful and yummy week! One thing about me is that I enjoy cooking and a fun fact about me is that I wanted to be a chef before being a nutritionist student, glad I ended up in the same path... the foodie life!


As much as I love food and cooking I love having things with a purpose, such as recipes that include natural ingredients, mostly low carb since I noticed that personally my body loves it this way, of course with all the flavor, and also, let's not forget about convenience when it comets time and money.



This recipe was a kind of a copycat of one of the popular bars in the supermarket, the ingredients are so neat but I don't like the sugar quantity they have, plus the ingredients are so simple. Simple enough to make my own version at home! Who's with me?


The original bar is not vegan since it contains milk powder, instead of using that I substituted it for Cave Shake coconut milk powder, vegan, low carb plus it taste better! Let's support little companies shall we?


Also, the main ingredient is almond butter, creamy please! But I'm sure you could use crunchy if you prefer it that way, I get the Whole Foods brand and I'm not sure about the price but definitely lower than 7dlls compared to others that taste as good as this one but the price goes up to 9dlls... yeah thank you but no thanks! I will stick to my Whole Foods brand.


As the sweetener I normally use is monk fruit and I get it online on their sales for a much lower price and all the low carb goodness, but you can substitute it for coconut sugar if you want too! Another key ingredient of these bars is the protein powder, I usually get it at Amazon, cheaper and you can choose from all the flavors.




So now you can see that the ingredients are very simple and the method incredibly easy! It's a no brainer, so you these are perfect for anyone, no matter the cooking skills and for anyone with a busy schedule since these can be stored in the freezer, so they are perfect as an anytime treat or snack.


 

Almond Butter Bites

Serves 12


INGREDIENTS


- 1 cup of creamy almond butter

- 2 scoops of organic vegan protein powder (Used Nuzest: PURELYHL for 15% off)

- 3 tbsp (32g) of coconut milk powder*

- 1/3 cup of monk fruit

- 1/2 cup of hot water

- 1 tsp of cinnamon


METHOD


1. In a bowl pour the almond butter, add the hot water and stir.

2. Add the rest of the ingredients, maybe you'll need to add extra water or heat the mix.

3. Pour the mixture in 12 silicone muffin cups and freeze for 3-4 hours.

4. ENJOY!
