Pesto Sandwich Bake (Gluten Free & Keto)

Prepare yourself to delight your taste buds with this simple and most amazing Pesto Sandwich Bake! Vegetarian, gluten free and keto friendly recipe that will hit the spot at any time of the day no matter if it happens in the morning or afternoon!


Well, the magic on this recipe begins from the inspiration of one of our all time favorite, lasagna. But instead of broiling some pasta sheets we are using a sandwich bread. So this is not quit a lasagna but more like a sandwich bake... a stack of cheesy heaven paired with pesto.



This recipe took me less than twenty minutes to prepare plus the twenty-five minutes I left baking inside the oven so this is a great recipe if you are planning on meal preps, hosting a brunch, lunch or even as a mid-week dinner!



The base, as I mentioned before is made from sandwich bread, you can used the one that you like the most, I used a low carb gluten free one but I will leave you here with some of my favorite options to buy!



For this recipe I used California Country Gal, but both are great options. Of you are looking for a gluten free option you can use this one too! You can order it online, and if you are looking for a keto option and plant-based one too Carbonaut is a great option that you can find at Target or Sprouts.



Here's the list of ingredients you'll need for this Pesto Sandwich Bake:

  • Sandwich bread (I used this)

  • Tomato

  • Mushrooms

  • Avocado pesto*

  • Shredded mozzarella cheese

  • Sea salt

  • Black pepper

  • Garlic powder



For the avocado pesto I took the easy and convenient road and used Good Foods Avocado Pesto Dip, a whole container. There's a store locator on their site in case you also want to take the easier road. They have the best dips and spreads with simple ingredients!

Anyways, this is a crowd pleaser! Kids and adults will love this recipe and I hope you do too since it's not only super easy and mostly mess free but it's also delicious! A fancy but extremely easy recipe, hard to miss this!

The Final Result:

This is very saucy, comforting and cheesy! It felts into your mouth with every bite. The combination of tomatoes, cheese and pesto maes this recipe a whole mouthful experience that will make you feel like in a gourmet restaurant... at home!



You can also air fry it for a couple of minutes once sliced and cool if you want an extra crispy edge. For my baked and soft was also perfect as part of my lunch or dinner. You can also freeze the slices and reheat them in the microwave. This is also a kid-friendly recipe, hard to resist a good italian recipe with the comfort of a cheese sandwich.

Pesto Sandwich Bake

Serves 8


Ingredients

  • 3 pieces of sandwich bread (I used this)

  • 1 medium sliced tomato

  • 2 cups of sliced mushrooms

  • 1 cup of avocado pesto* (I used this)

  • 1 cup of shredded mozzarella cheese

  • 1 tsp of sea salt

  • 1/4 tsp of black pepper

  • 1/4 tsp of garlic powder


Method

  1. Preheat the oven at 350F.

  2. Bake the bread for 12 minutes.

  3. Once the bread is baked cut it in a way that fits your baking loaf dish (I used one made from silicone to make it easier to removed once ready but you can also put waxed paper in the bottom).

  4. But one layer of bread into the bottom of the loaf baking dish.

  5. Top with 1/2 cup of pesto, add a layer of mushrooms and 1/2 cup of cheese, sprinkle garlic, salt and black pepper.

  6. Top with another layer of bread and top it with the rest of the pesto, add the cheese, mushrooms and tomato on top.

  7. Bake for 25 minutes.

  8. Cut into 8 pieces and enjoy!

Notes

*You can use regular pesto.
