You only need your chopping board and one skillet so double win for a mess free and delicious healthy recipe! One of the best parts of this recipe is that it's made with simple ingredients and it just takes a few steps to make! Using my favorite ingredients; My obsession chipotle, asparagus (can't get enough) and pineapple.

We are showing some love to all my fried rice and chipotle enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the pineapple, red pepper flakes and also, chipotle.

Keeping it extra delicious, healthy and just pretty to look at by using some red pepper flakes, and pineapple for the pretty pop of color and flavor, and to make it even healthier we are using some asparagus, pineapple, coconut aminos, and of course some of these fantastic chipotle. A great healthy recipe without sacrificing great taste!
You won't see skewers another way from now on! This is simply perfect for meal prep since they just require a few ingredients as well as minimal steps to make this fried rice bowl, also ready to enjoy for dinner of lunch.

The base is made with simple ingredients, some Palmini Rice, asparagus, chipotle, pineapple, coconut aminos, ginger and chipotle of course. The perfect side dish for your salmon, shrimp, or like me, loved it with a fried egg on top.
Feel free to use your favorite protein, but you I highly recommend using a runny fried egg, the yolk along the flavor of the rice is something magical!You can also use chicken beef, pork and of course some tofu!

BPineapple Chipotle Fried "Rice"

Serves 4 serving
Ingredients
1 pack of Palmini Rice
2/3 cup of chopped asparagus
1/2 tbsp of coconut aminos
1 tbsp of chipotle puree
1 tsp of garlic
1/4 tsp of sea salt
1/8 tsp of black pepper
1/2 tsp of ginger
Toppings
1 fried egg (seasoned)
2 tsp of red pepper flakes
Method
Cook the ingredients in a skillet for 4-5 minutes stirring occasionally.
Cook and egg, add salt and pepper.
Serve the "rice" in a bowl and add your toppings.
Enjoy!
