Pineapple Upside Down Colada Pancakes

Serves 10
Ingredients
Pancakes
1 pack of Bake Me Healthy Oatmeal Pancake & Waffle Plant-Based Baking Mix
2 cup of coconut milk
1/3 cup avocado oil
1 tsp of vanilla extract
1/2 tsp of rum extract
12-14 slices of canned pineapple (no sugar added)
Toppings
Freeze Dried Strawberries
Coconut Butter
Instructions
Preheat the oven at 350F.
Mix all the ingredients for the pancakes.
Cook the pancakes on a griddle, add a peach of pineapple into each pancake and for 3-4 minutes in medium heat.
Serve with coconut butter and fruit.
