Pistachio & Raspberry Cheesecake Cookies

Serves 14 cookies


Ingredients

  • 1 pack of Belly Collagen Cookie Mix

  • 1/4 cup + 2 tbsp of softened ghee

  • 1 tsp of vanilla extract

  • 3 tbsp of milk

  • 3 tbsp of crushed pistachios

  • 3 tbsp of freeze dried raspberries

  • 1/3 cup of cream cheese


Instructions

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients for the cookies, save half of the pistachios for topping.

  3. Add the wet ingredients along with the ghee, mix until fully incorporated.

  4. Scoop the cookie dough and place about 1/2 tbsp of cream cheese into each cookie and cover it to have it as a filling.

  5. Place the cookies in a baking tray, top with leftover pistachios.

  6. Refrigerate for 15 minutes for better cookies.

  7. Bake for 10-11 minutes.

  8. Enjoy!
