There's something about cornbread and cheese that it just so special and delicious, I decided to mix some of my favorite flavors here! And now with corn season here this recipe needs to happen along with some roasted poblano peppers and also some Folios Cheddar Cheese Wraps.

The ingredients are simple and short, and the process of making these is just as minimal and easy, you'll be surprised... your guests and their tastebuds! This recipe is perfect no matter the occasion but I wanted to add a little fun twist by using cheddar cheese wraps, roasted poblano peppers and corn, of course.,
Using also some low carb pancake mix to save some steps and some cottage cheese to add moisture and flavor to this high protein cornbread, this recipe is made with all gluten free and low carb ingredients that will please your tastebuds in every bite.
What's in this Poblano Cheese Cornbread?
As I mentioned earlier, I used Folios Cheddar Cheese Wraps which are super versatile and made with just simple ingredients, the perfect topping for this roasted poblano cornbread! The seasonings included in this recipe are real salt, black pepper, garlic powder and some dried chilie flakes on top.
You can even pair this recipe with your favorite protein and have this as a side dish! As a nutritionist I know that healthy eating should be sustainable and convenient without sacrificing any taste.

Poblano Cheese Cornbread

Serves 6-8 servings
Ingredients
1 cup of low carb pancake flour
1 tsp of sea salt
1 tsp of garlic
1/8 tsp of black pepper
1 1/2 cup of fat cottage cheese
3 eggs
1 cup of corn
1 cup of chopped and roasted poblano peppers
2 slices of Folios Cheddar Cheese Wraps
Instructions
Preheat the oven at 350F.
Mix the flour and seasonings in a large bowl and then add the cottage cheese, corn, eggs and half cup of the poblano peppers.
Pour into a baking dish and top with cheese and the rest of the poblano peppers.
Bake for 32-34 minutes. Let cool and enjoy!
