You only need simple ingredients to create this show-stopping potato salad! One of the best parts of this recipe is that it's made with simple ingredients and it just takes a few steps to make! Using my favorite ingredients; My current obsession La Terra Fina Spinach Artichoke Parmesan Dip, potatoes (can't get enough) and pomegranate arils.

We are showing some love to all my potato enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the La Terra Fina Spinach Artichoke Parmesan Dip, pizza seasoning and making an easy fresh pomegranate arils and rosemary.

Keeping it extra delicious, healthy and just epic by using some garlic, and dutch potatoes and to add more flavor some sauce, and to make it even healthier we are using some pomegranate seeds, greek yogurt, rosemary, and of course some of these fantastic Melissa's Baby Dutch Yellow Potatoes. A great healthy recipe without sacrificing great taste!
You won't see skewers another way from now on! This is simply perfect for meal prep since they just require a few ingredients as well as minimal steps to make these amazing potatoes, also ready to enjoy for dinner of lunch.

The base is made with simple ingredients, some baby dutch yellow potatoes, pomegranate arils, pizza seasoning, and of course, fresh rosemary to make the cream along with some La Terra Fina Spinach Artichoke Parmesan Dip and greek yogurt this delicious, healthier recipe for your family.
Feel free to use your favorite type of potato, but you I highly recommend using Melissa's Baby Dutch Yellow Potatoes because these are seriously so buttery and great for grilling or baking!

Pomegranate & Rosemary Artichoke Dip Potato Salad

Serves 1-2 serving
Ingredients
1 tsp garlic powder
1 tbsp of pizza seasoning
1/8 tsp of black pepper
1/2 tsp of sea salt
Spinach Artichoke Parmesan Dip Cream
1/2 cup of plain yogurt
1/2 cup of La Terra Fina Spinach Artichoke Parmesan Dip
1 tsp of parmesan cheese
1 tsp of garlic
2 tsp of red pepper flakes (for garnish)
1 tbsp of fresh chopped rosemary
1/4 cup of fresh pomegranate arils
Method
Slice the potatoes In half and create little cuts across each half.
Microwave for 2 minutes, toss them in a large bowl and mix with all of the ingredients.
Transfer the potatoes to your air-fryer basket.
Air fry for 24 minutes at 385F (shake the basket half way there).
Mix the ingredients for the cream.
Serve in a plate with red pepper flakes and enjoy!
