You can count on me when it comes to easy peasy and mess free recipes! This time I tried this epic recipe by coating it with a comforting chicken casserole, all gluten free, high protein and keto friendly. Using some poppy seed dressing and keto croutons.
Plus we are adding that extra veggies to the recipe and guys, broccoli and cherry tomatoes really bring up a great taste and texture! And since broccoli has been a staple in my fridge for a couple of... years? I thought it was time to share this amazing recipe.

This is extremely easy to make and extremely flavorful! The ingredients are also super basic and probably a list of ingredients you've already got in your pantry; chicken, cream, broccoli and for the poppy seed factor I'm using some Panera Bread Poppy Seed dressing.
The crispy croutons, in this recipe is just a perfect gluten free and keto friendly ingredient that creates that extra crunch factor, plus the cream... it's just an ultimate comfort food!
What's in this Poppy Seed Chicken Casserole?
As I mentioned earlier, I used a shredded chicken, heavy cream with no sugar added, keto croutons, cherry tomatoes, broccoli and of course our main ingredient, poppy seed dressing! The seasonings included in this recipe are real salt, black pepper, garlic powder and some taco seasoning.
This is a great recipe for lunch, weekday dinners and meal preps. It also feeds a crowd and it's just so so easy to make and mega flavorful and a great way to sneak in some veggies.
The ideas go beyond plain boring salads, for example... I remember growing up, my mother served me steamed cauliflower with mayonnaise, sounds crazy but it works!

These are easy to make, creamy, flavorful and so addicting! I'm obsessed, and since I have always been a fan of easy casseroles since it's a great way to get a lot of flavors and nutrients at once. This skillet is no difference and it has a great combination of flavors; poppy seed and broccoli! So so good!
Gosh! It was good. It's such an easy comfort food; creamy, crunchy, warm and with a nice kick of poppy seed goodness in a low carb skillet.
I enjoyed mine for dinner or lunch, alone and by the forkful as a snack! A recipe worth making again no matter the season, while watching movies or to give them to the kiddos as a fun snack! At the end it's hard to resist these creamy, saucy and flavorful and comforting casserole while getting some vitamin C, calcium, antioxidants from it.
Not boring or complicated! This are a great lunch for kids and grown ups. Pro tip: You can add some buffalo sauce... don't knock it till you try it!

Poppy Seed Chicken Casserole

Serves 6-4 servings
Ingredients
8oz. of cooked shredded chicken
1/2 cup of half cream
1/4 cup of Low Carb Poppy Seed Dressing
1 egg
2 cups of broccoli
1/2 cup of cherry tomatoes
1/8 tsp black pepper
1/2 tsp of real salt
1/2 tsp of garlic
Method
Preheat the oven at 350F.
Mix all the ingredients in a large bowl.
Place the mix in a greased baking dish.
Bake for 25-30 minutes.
