As if we couldn't love blondies even more, I decided to take it to the next level with this funfetti chocolate pound cake idea, perfect as a healthier and indulgent sweet snack or dessert.


I know it sounds crazy but who said that eating healthy was boring? These blondies and as other of my recipes is just another proof that you can enjoy a fun sweet without all the sugar or gluten!

Thick, flavorful and fun pound cake! For this recipe I used simple and better for you ingredients; from the chocolate to the sprinkles (these are naturally colored) and no artificial nothing.



The thing of using coconut flour and almond as my flour, these two are more nutritious than other flour replacements plus they are naturally gluten free. Coconut flour gives this pound cake the amazing thick factor.



Another factor or nutrient density and flavor is the chocolate and strawberries! Not only to look pretty and to add flavor but these also add some antioxidants and micro nutrients that will make this recipe extra special. Strawberries, cherries and chocolate? Hard to resist!

Strawberry Cherries N' Cream Blondies:

Serves 9 servings


Ingredients

Toppings

  • 1/2 cup of strawberries

  • 6 pieces of cherry organic chocolate


Method

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients; almond, coconut flour, monk fruit, baking powder.

  3. Add the melted ghee, egg whites and greek yogurt into the cake mix and mix well.

  4. Pour the batter in a 8x8 silicone baking dish.

  5. Add chopped chocolate and strawberries.

  6. Bake for 24-28 minutes.

  7. Let it cool down, cut into 9 pieces and enjoy!
