Protein Cinnamon Raisin Oatmeal Cookies

Serves 10 medium sized cookies
Ingredients
1 1/2 cup of oats
3 scoops of Chike High-Protein Coffee in Cinnamon
1/4 cup of coconut flour
1/2 tsp of baking powder
1/4 tsp of sea salt flakes
1/2 cup of brown granulated monk fruit
1/2 cup of monk fruit
2 whole eggs (room temperature)
1 yolk
2 tsp of vanilla extract
1/2 cup of almond butter
1/4 cup of raisins
Sugar-Free Frosting
1 cup of powdered granulated monk fruit
1 tsp of vanilla extract
2-3 tbsp of unsweetened almond milk
Instructions
Preheat the oven at 325F.
Mix all the dry ingredients in a large bowl.
Add the wet ingredients and incorporate well.
Create 10 cookies and bake for 12 minutes.
Let It cool down in the fridge. Mix the ingredients for the frosting.
Drizzle the sugar free frosting and enjoy!
