Protein Pecan Chai Scones with Maple Glaze

Serves 6


Ingredients

  • 1 1/2 cup of all purpose gluten-free flour

  • 1/3 cup of rolled oats

  • 1 tsp of baking powder

  • 1 tsp of cinnamon powder

  • 1 tsp of chai spices

  • 2/3 cup of granulated monk fruit

  • 2 tsp of vanilla extract

  • 1/3 cup of ghee (room temperature)

  • 1 cup of Wallaby's Whole Milk Aussie Style Greek Yogurt in Vanilla Bean

  • 1 organic whole eggs

  • 1/4 cup of crushed pecans

Sugar-Free Maple Glaze

  • 1 cup of powdered monk fruit

  • 3 tbsp of sugar-free maple syrup (or regular)


Instructions

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients for the scones.

  3. Add the wet ingredients and mix until fully incorporated.

  4. Create 6 scones and place them in a baking tray.

  5. Bake for 25-28 minutes (they should look golden)

  6. Mix the ingredients for the glaze.

  7. Once the scones are baked and cooled top them with glaze.

  8. Serve and enjoy!
