Protein Pumpkin Spice Latte Muffins

Serves 9 muffins


Ingredients

  • 1 cup of oat flour

  • 2 scoops of Rise Bar grass-fed almond chocolate protein

  • 2/3 of granulated monk fruit

  • 2 tbsp of instant coffe

  • 1 tsp of pumpkin spice

  • 1 egg

  • 2 tsp of vanilla extract

  • 1/2 cup of pumpkin puree

  • 1/2 cup of whole milk

  • 1 pinch of sea salt

  • 1/4 cup of sugar-free white chocolate chips

  • 1 chopped Rise Bar  Almond Mocha Protein Bar


Sugar-Free Glaze

  • 1/2 cup of powdered monk fruit

  • 1 tsp of vanilla extract

  • 2 tbsp of unsweetened almond milk


Instructions

  1. Preheat the oven at 350F.

  2. Mix all dry ingredients in a bowl, except for the bars and white chocolate chips.

  3. Add the wet ingredients.

  4. Fold in the chopped bars and chocolate chips (save some chocolate chips for the topping).

  5. Transfer the batter into 9 silicone muffin cups.

  6. Bake for 25 minutes and let them cool down.

  7. Mix the ingredients for the frosting.

  8. Top the muffins with frosting, and enjoy!
