For the Cake:
1 1/2 cups gluten-free flour
2/3 cup of granulated monk fruit
3 whole organic eggs
1/4 cup of unsweetened almond milk
1 cup of Wallaby’s Organic Aussie Greek Style Whole Milk Yogurt
1 tsp vanilla extract
1 tbsp natural red food coloring
1/4 tsp kosher salt
1 tsp baking soda
1 tsp baking powder
For the Frosting:
1 cup of Wallaby’s Organic Aussie Greek Style Whole Milk Yogurt
1/2 block (4 oz) room temperature organic cream cheese
2 tsp vanilla extract
1 cup powdered monk fruit
For Topping:
1/2 cup unsweetened shredded coconut
Instructions
Preheat the Oven: Begin by preheating your oven to 350°F (175°C).
Prepare the Dry Ingredients: In a large mixing bowl, combine the gluten-free flour, baking soda, cacao powder, monk fruit, baking powder, and kosher salt. Whisk the dry ingredients together until well blended.
Combine the Wet Ingredients: In a separate bowl, whisk together the organic eggs, Wallaby’s Organic Aussie Greek Style Whole Milk Yogurt, vanilla extract, and natural red food coloring until smooth and fully combined.
