I have been all about easy and fresh meals lately; the Mexican inspo is just part of my blood so in today's recipe I'm sharing these amazing and delicious nachos using dairy free and low carb recipe.
The funny part of Mexican food is, well, most traditional foods such as enchiladas, tacos, chilaquiles, flautas and others is that the based ingredients are the same:
Protein
Corn Tortillas
Sauce
Nachos, like no other of these traditional Mexican recipes is made with the same simple ingredients but in this occasion we are doing it low carb, grain free and dairy free! Still as delicious, don't worry!
So here I'm simply using pulled pork, nitrate free and hormone free that you can get at the supermarket. Pairing it with some jicama slaw to add a touch of freshness, fiber and fun to these nachos.
Okay, here's what you'll need for this recipe, let's gather up the ingredients!
Pulled Pork
Grain Free Tortillas
Dairy Free Queso
Jicama
Carrots
Red Cabbage
Mayonnaise
Real Salt
Black pepper
For the grain free tortillas you can use Siete, almond flour tortillas that are lower in carbs plus the taste and texture is perfect or you can use your favorite type of tortilla here. We are baking them to get that crispy corn tostada we want for the nachos.

These nachos will be great for your next friend or family gathering, the touch and the combination of flavors here will take their taste buds to the next level. Plus it's super convenient and easy to make if you already have the pork in hand!
If you are not entirely gluten free feel free to use the queso you like! I simply used Good Foods plant based queso because it taste amazing and it's super creamy. It plays so well with the taste of the jicama slaw too!

Easy Italian Sausage Cheese Quiche

Serves 9
Ingredients
1 cup of shredded pulled pork
3 grain free tortillas (like Siete)
1/2 cup of dairy free queso
1 cup of shredded jicama
1/4 cup of carrots
1/2 cup of shredded red cabbage
2 tbsp of mayonnaise
1 tsp of real salt
1/8 tsp of black pepper
Method
Preheat the oven at 350F.
Cut the tortillas into pieces and place them in a baking mat, sprinkle some salt.
Bake for 12-15 minutes.
Place them separately in a plate.
Prepare the jicama slaw by mixing the jicama, red cabbage, mayonnaise, salt, pepper and set aside.
Top the tortillas with pulled pork and drizzle some queso.
Add the jicama slaw on the side and enjoy!
