Pumpkin Baklava Bread Pudding

Serves 4-6
Ingredients
6 slices of Eat Royo Artisan Bread
2 whole eggs
1/4 cup of sugar-free caramel coffee creamer
1 tsp of chai spice
1 tsp of cinnamon
1/2 cup of pumpkin puree
1/2 cup of milk
1 tsp of vanilla extract
2 tbsp of raw honey
3 tbsp of monk fruit
Toppings
Sugar-Free Glaze (Powdered Monk Fruit + Almond Milk)
Crushed Nuts
Raw Honey
Instructions
Cut the bread into cubes.
Mix the eggs with creamer, honey, granulated monk fruit, milk, vanilla extract, chai spices and pumpkin puree.
Soak the bread and transfer into a baking dish.
Bake for 25-30 minutes.
Add toppings to your bread pudding and enjoy!
