Pumpkin Cheesecake Glazed Muffins

Serves 12 muffins


Ingredients

  • 2 cups of gluten-free flour

  • 1 tsp of cinnamon

  • 1/4 tsp of ginger

  • A dash of clove and cardamom

  • 1 tsp of Crystal Diamond Baking Salt

  • 1 tsp of baking powder

  • 2/3 of RxSugar alullose (MARIA20 for discount)

  • 2 whole eggs

  • 1 tsp of vanilla extract

  • 1/2 cup of vanilla greek yogurt

  • 2 medium bananas

  • 1/2 cup of pumpkin puree

  • 6 pieces of laughing cow cheese

Frosting

  • 1 cup of powdered monk fruit

  • 3-4 tbsp unsweetened coconut milk

Instructions

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients.

  3. Microwave the bananas for 1:30 minutes.

  4. Incorporate the pumpkin, bananas, greek yogurt, vanilla extract, eggs, and mix well.

  5. Transfer to 12 silicone baking muffin cups.

  6. Slice each cheese piece into half. Top each muffin with the laughing cow cheese.

  7. Bake for 19-20 minutes and let it cool.

  8. Mix the ingredients for the glaze, top the muffins with it and add more cinnamon, and crushed cereal (optional), enjoy!
