The base is made with simple ingredients and Naked Nutrition Vegan Pumpkin Spice Protein pea protein to keep it nutrient dense and gluten free. For the base I also included some MCT Oil and some keto coffee creamer in caramel (always check ingredients too!).


The MCT helps with nutrient absorption and it add the creaminess of the base of these pumpkin spice bars, if you don't have any you can also use your favorite nut butter or coconut oil.

You might want to save this recipe because a second batch might be needed here! I shared some of these bars with my friends, these were just too good as my afternoon snack after crossfit or dessert that I had to bake some more.

Pumpkin Chocolate Fudge Cookie Protein Bars

Method

  1. Add the pea protein, the cereal for the, granulated monk fruit, cinnamon and mix.

  2. Add the MCT, almond milk, coffee creamer and mix well.

  3. Transfer the batter into two silicone loaf dish.

  4. Cut the chocolate fudge bars and cookies into little pieces.

  5. Top the protein batter with the bars and cookies.

  6. Freeze a few hours or overnight and cut into 10 pieces.

  7. Enjoy!
