Pumpkin Cookie Brûlée Cheesecake

Serves 1-2
Ingredients
2 whole eggs
1 tsp of vanilla extract
1/2 cup of pumpkin puree
4 pieces of laughing cow cheese
1/2 of RxSugar alullose (MARIA20 for discount)
Brûlée Topping
1/3 cup of granulated monk fruit
1 pack of mini keto chocolate chip cookies
Instructions
Preheat the oven at 350F.
Blend all the ingredients for the cheesecake.
Pour into a small baking dish.
Bake for 35-40 minutes.
Let it cool down completely.
Sprinkle the monk fruit on top and roast it with a kitchen torch.
Top with cookies and enjoy!
