Pumpkin Spice Tres Leches Cake

Serves 9 pieces
Ingredients
Cake
1 pack of your favorite cake mix (used Scotty's Everyday Cupcake Baking Mix)
Ingredients indicated on the box but trade the oil or butter for pumpkin puree
Tres Leches Mix
Toppings
1 cup of TruWhip Vegan Whipped Topping
1 tsp of cinnamon powder
2 tbsp of brown granulated monk fruit
Instructions.
Preheat the oven at 325F.
Mix all the ingredients for the cake.
Pour the cake batter into a 8x8 baking dish and bake for 22-24 minutes (you can poke it with a toothpick to make sure it's done).
Mix all the ingredients for the tres leches mix.
Let the cake cool down completely.
With a knife remove the baked topping of the cake to level it up.
Poke it with a fork and drizzle slowly the tres leches. Once soaked.
Add your toppings, slice into 9 pieces and enjoy!
