Pumpkin Spice Tres Leches Cake

Serves 9 pieces


Ingredients

Cake

  • 1 pack of your favorite cake mix (used Scotty's Everyday Cupcake Baking Mix)

    Ingredients indicated on the box but trade the oil or butter for pumpkin puree

Tres Leches Mix

  • 1/2 cup of TruWhip Vegan Whipped Topping

  • 1/2 cup of plant-based vanilla milk

  • 1/2 cup of Nutpods pumpkin spice coffee creamer

  • 1 tsp of cinnamon powder

  • 3 tbsp of sugar-free vanilla syrup (optional for extra sweetness)

Toppings

  • 1 cup of TruWhip Vegan Whipped Topping

  • 1 tsp of cinnamon powder

  • 2 tbsp of brown granulated monk fruit


Instructions.

  1. Preheat the oven at 325F.

  2. Mix all the ingredients for the cake.

  3. Pour the cake batter into a 8x8 baking dish and bake for 22-24 minutes (you can poke it with a toothpick to make sure it's done).

  4. Mix all the ingredients for the tres leches mix.

  5. Let the cake cool down completely.

  6. With a knife remove the baked topping of the cake to level it up.

  7. Poke it with a fork and drizzle slowly the tres leches. Once soaked.

  8. Add your toppings, slice into 9 pieces and enjoy!
