Using my favorite ingredients; My current obsession, Organic biscuit dough (used Immaculate Baking), along with some pears and laughing cow cheese.

We are showing some love to all my biscuit and bread pudding enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding some laughing cow cheese and a touch of coconut, hazelnut, and of course, croisssants.

Keeping it extra delicious, healthy and just epic by using some pears for the pretty pop of color and nutrients, and to make it even healthier we are using RxSugar alullose as our sweetener, some laughing cow cheese, egg whites, coconut, hazelnuts, and of course some baked organic biscuit dough. A great healthy recipe without sacrificing great taste!
You won't see biscuit dough or bread pudding another way from now on! This is simply perfect for meal prep since they just require a few ingredients as well as minimal steps to make these little loaves, also ready yo attack that sweet tooth at any moment.

The base is made with simple ingredients, some hazelnut, coconut, almond milk, egg whites, and to keep things sweet some RxSugar alullose, and for the baked buttery biscuits. The perfect texture for this french toast casserole.
Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using alullose or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat bread pudding another way! These are super easy to make and just super yummy, plus good for you. I have been trying to increase some antioxidants in my diet so the hazelnuts and coconut here hits the spot for that amazing color and nourishment.

"Raffaello" Cheesecake Biscuit Bread Pudding

Serves 2 serving
Ingredients
2 baked biscuits
1/3 cup of egg whites
2 tbsp of RxSugar alullose
1/3 cup of unsweetened almond milk
1 tsp of vanilla extract
2 pieces of the laughing cow cheese
Toppings
2 tsp of unsweetened shredded coconut
1 tbsp of hazelnut butter
Method
Preheat the oven at 350F.
Cut the biscuits in pieces.
Mix all the unsweetened almond milk, egg whites, RxSugar alullose and vanilla extract.
Soak the biscuits in the mix and transfer to a small baking dish.
Top with hazelnuts, coconut and laughing cow cheese.
Bake for 18 minutes.
