Rajas Poblanas Spring Rolls

Serves 3-4 rolls
Ingredients
1 cup of chopped roasted poblano peppers
1/2 cup of canned corn (drained)
1 tbsp of dried onion flakes
1/2 tsp of pink salt
1 tsp of garlic
1/8 tsp of black pepper
4 mozzarella cheese sticks
4 rice paper wrappers
To Serve
Cilantro
Chopped Red Onion
Method
Mix all the chiles corn and seasoning.
Soak the rice paper in water for 30 seconds or less.
Stuff them with part of the corn mix and one cheese stick and roll them like a burrito.
Air fry for 15-18 minutes and serve with toppings.
