Rich Chocolate Cookie Cheesecake (Gluten Free & Keto)

One thing is for sure, you can count on me to make no bake recipes no matter the season... they are just super convenient when it comes to meal prep! I even got my designated are in the freezer for all my snacks, including this one!


No bake gut friendly and delicious cheesecake! One of the best parts of this recipe is the no bake part... so basically is just mix, pour and refrigerate type of method, extremely easy! But these cheesecake bars are gut friendly since we are working with beef gelatin, ricotta cheese with probiotics and no gluten!



About these Rich Chocolate Cookie Cheesecake:

These are just a chocolate dream! But with that I also wanted to include a twist, a fun a de delicious twist by just adding some Siete Foods Chocolate Shortbread Cookies that I will add that cookie factor while keeping things gluten free and delicious!


To add that extra crunch factor of this recipe I also included some of the Marigold Almond Mocha Crunch Keto Bars, such a game changer! And it really brings up that extra taste of chocolate and that texture that takes these cheesecake bars to the next level.


Key Ingredients:

Adding some protein powder for extra creaminess and a satisfying filling. I have been also obsessed with the Marigold Rich Chocolate Whey Isolate, their ingredients are always gre best and the taste is always delicious too, this chocolate whey is basically a healthy, dreamy and indulgent chocolate milk shake (keto and gluten free!).

The base is made with simple ingredients, pea protein (or coconut flour) and almond flour to keep it nutrient dense and gluten free. Since we are not using any eggs we are using beef gelatin as our glue for these bars, it's just my favorite ingredients when it comes to no bake recipes.

Soft and flavorful! The contrast of flavors and textures is just amazing, the toppings are just divine... the protein bars with the cookies work perfectly with the creamy ricotta cheese filling of this cheesecake.


Melts in your mouth! The cookies and bars bring up that amazing crunch factor too that makes these even more satisfying.



You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to bake some more.

Pro tip: You can also drizzle some melted chocolate to make them even prettier and tastier!

Rich Chocolate Cookie Cheesecake

Serves 9 servings


Ingredients

Base

  • 1/2 cup of almond flour

  • 1/2 cup of Nuzest pea protein

  • 1 cup of hot water

  • 1 tsp of cinnamon

  • 1/3 cup of granulated monk fruit

Filling

  • 2 cups of ricotta cheese (or cottage cheese)

  • 3 scoops of Rich Chocolate Whey from Marigold (PURELYHL for discount)

Toppings


Method

  1. Mix the coconut flour, beef gelatin, monk fruit, pea protein and cinnamon.

  2. Add the hot water and mix well.

  3. Transfer the dough into a 8x8 silicone baking dish and press the dough evenly.

  4. Refrigerate for 10-15 minutes.

  5. Blend the cream cheese, monk fruit and almond milk for the filling and fold with the grain free cereal and chopped macaroons.

  6. Spread the filling over the base.

  7. Cut the bars and add the rest of the toppings.

  8. Freeze a few hours or overnight and enjoy!
