We are showing some love to all my french toast casserole and s'mores enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the laughing cinnamon, marshmallows and a touch of keto chocolate syrup, and also, Royo Low Carb Challah Buns.

Keeping it extra delicious, healthy and just epic by using some raspberry for the pretty pop of color and nutrients, and to make it even healthier we are using RxSugar alullose as our sweetener, some yogurt and of course some of these fantastic Royo Low Carb Challah Buns (PURELYHL for discount). The base is made with simple ingredients, some sugar-free marshmallows, keto chocolate syrup, raspberries and to keep things sweet some RxSugar alullose, and for the bread I have been loving these Royo Low Carb Challah Buns. The perfect texture for this french toast casserole.


Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using abullone or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat leftover bread another way! These are super easy to make and just super yummy, plus good for you. I have been trying to increase some antioxidants in my diet so the raspberries here hits the spot for that amazing color and nourishment.

Mango Cheesecake French Toast Casserole

Serves 4 serving


Ingredients

  • 3 pieces of Royo Low Carb Challah Buns

  • 1/2 cup of egg whites

  • 1/2 cup of unsweetened almond milk

  • 1 tsp of vanilla extract

  • 1 scoop of Nuzest Pea Protein in Vanilla

  • 1/2 cup of RxSugar alullose

  • 1/2 tsp of cinnamon

Toppings

  • 1 cup of sugar-free marshmallows (used Choc Zero)

  • 2 tbsp of sugar-free chocolate chips

  • 3 tbsp of RxSugar Chocolate Syrup

  • 1/4 cup of frozen raspberries

Method

  1. Preheat the oven at 350F.

  2. Mix all the unsweetened almond milk, egg whites, alullose, protein, cinnamon and vanilla extract.

  3. Cut the bread into cubes.

  4. Add the bread to the mix and let it soak, transfer to a baking dish.

  5. Bake for 25 minutes.

  6. Add the toppings. Roast the marshmallows with a kitchen torch or in the oven.

  7. Enjoy!
