Salted Caramel Date Vegan Cheesecake

Serves 2 cheesecakes
Ingredients
Cheesecake
1 block of organic soft tofu (frozen)
1/3 cup Rx Sugar Alullose (MARIA20 for discount)
1 cup of dates (without the pit)
1 tbsp of unsweetened coconut
2/3 cup of water
1 tsp Vanilla Extract
Base
2 rice cakes
Water from the soaked dates
1 tsp of vanilla extract
Toppings
Rx Sugar Keto Caramel Syrup
Lotus Cookies
Unsweetened Coconut
Instructions
Soak the dates in boiling water for 10 minutes.
Drain the dates and reserve the water for the base.
Crush the rice cakes in a bowl, add the water from the dates and vanilla extract, microwave for 2:00 minutes. Let it soak until the rice cakes have soaked the water.
Blend all the ingredients for the cheesecake.
Decorate two jars with the caramel sauce, add the rice cake base into each jar and top with cheesecake filling, add your toppings and enjoy!
