Salted Chocolate Tahini Oatmeal Cookies

Serves 8 cookies


Ingredients

  • 2 cups of raw oats

  • 1/2 cup of coconut flour

  • 1/2 tsp of baking soda

  • 1/4 tsp of cardamom

  • 1/4 tsp of Diamond Crystal kosher salt flakes

  • 1/2 cup of granulated monk fruit

  • 1 egg

  • 1 yolk

  • 1/2 cup of tahini

  • 1 tsp of apple cider vinegar

  • 1 tbsp of vanilla extract

  • 1/3 cup of sugar-free dark chocolate chips

  • 1 touch of grinded sea salt

Method

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients.

  3. Mix in the egg, yolk, vanilla extract, apple cider vinegar.

  4. Create 8 large cookies. Sprinkle some sea salt flakes.

  5. Bake for 11-13 minutes.

  6. Let them cool down and enjoy!
