Sauerkraut Potato Crispy Bites

Serves 11 bites
Ingredients
500g of peeled and steamed potatoes
1/2 tsp of sea salt
2 tbsp of cornstarch
1 tsp of garlic
1/4 tsp of black pepper
1 whole egg
1 cup of drained sauerkraut
1/3 cup of sliced pickled beets
Polish Style Mustard Dip
1/2 cup of plain greek yogurt
1/4 cup of Polish Style Mustard
Coating
1 whole egg
3/4 cup of seasoned panko
Instructions
Smash the cooked potato and mix in the beets, sauerkraut, cornstarch, egg and seasoning.
Create 11 balls.
Beat the egg on a bowl and place the panko in another bowl.
Dip each ball first on the egg then coat completely in the panko.
Place in air fryer and cook for 12 minutes at 385F.
Mix the Polish Style Mustard and greek yogurt.
Serve the crispy potato bites with dip and enjoy!
