Shrimp Enchilada Boats (Keto, Low Carb)


The thing is that I absolutely love Mexican food and the fact is that this is probably due my DNA. Let me introduce myself again for those you don't know me... My name is Maria, a latina foodie and nutritionist, and I love Mexican food.


The other thing about me is that I love seafood, anyone else loves seafood? There's something about it that it always makes my tastebuds jump from joy. And if this is also your case then you are going to love this recipe!


After my LA trip all I wanted is to get back home and cook some seafood, the funny thing is that where I live there's no see nearby and in LA, well, yes! I was staying in Long Beach but during my stay I didn't eat ant seafood and my body wanted some so badly!


Okay, so after I got home I decided that I wanted to eat shrimp, and that being said, I ate seafood three days in a row. Two of those days consisting on shrimp (sorry not sorry!). On the second day I decided I wanted to get a little creative and test the waters with a fun recipe featuring of course, the main star of this recipe... shrimp.


And since you know, my genes, are also responsible for this kitchen experiment by making a twist of one of my all time favorite Mexican dish AKA enchiladas. But hold done! These are not your usual (or mine) enchiladas, these are a veggie style, low carb and keto friendly.


The essence of enchiladas is on nothing but the sauce, and to take the things to the next step we are adding cheese because for the most popular part enchiladas include cheese.


If you are like me, a girl who enjoys Mexican food and loves making low carb dishes then this is the perfect recipe and of course, it will keep you thriving if your body loves being in ketosis. This recipe is a must try!


I cooked mine on my air fryer because my obsession is real! Plus I find it more convenient at times were I can't wait for the oven to preheat, and of course we've got the crispy factor from the air fryer. Also, remember that traditional enchiladas are fried... so if you've got an air fryer I recommend using it for this recipe, if not, the oven is still a great method of preparation!


These can be a crowd pleaser for a Mexican fiesta, friend or family gathering since you can make these Shrimp Enchilada Boats on batches. These are also great for veggie picky eaters since it's a great way to incorporate some veggies in.

Shrimp Enchilada Boats

Serves 4

Ingredients

- 2 large zucchinis

- 1 + 1/2 cup of raw shrimp

- 1 tsp of sea salt

- 1 tsp of black pepper

- 1/4 cup of enchilada sauce (I used Siete)

- 2 organic mozzarella string cheese

Method

1. Preheat your air fryer at 400F (oven method below) a couple of minutes.

2. Cut each zucchini on half and with a spoon remove the center.

3. Place them in the air fryer for 10 minutes.

4. While the zucchini is cooking chop the shrimp, add salt and pepper.

5. Stuff each zucchini with shrimp and some sauce and cook for 8 minutes.

6. Top with chopped cheese and more sauce and cook fr another 4 minutes.

7. Serve and enjoy!

For the oven method repeat the same steps but cook at the oven in roast mode for 350F.
